THE HISTORY OF
DETROIT-STYLE
1940's Detroit was a bustling industrial hub. The growing Sicilian population was homesick for the Sfincione of southern Italy. The pans required to make this deep, airy bread weren’t readily available, but as factories modernized post-war, a local pizzeria discovered a solution. The blue steel utility trays used on automobile assembly lines were plentiful and could be used as makeshift pizza pans. And so the Detroit-style pie was born: a deep square crust with crispy frico edges.
